My Quick & Easy Spinach Zucchini Soup will be a great addition to your lunch or dinner or even for a quick snack to help fill you up! For the kids, I know it can be sometimes hard to get them to eat their veggies and putting them into a soup is a GREAT way to get those much needed nutrients in without making them feel like they're eating vegetables!
Zucchini is one of my favorite vegetables to work with. Not only is it very versatile, but it has some amazing health benefits as well:
Low in calories, rich in fiber with a high water content helps you to lose weight by making you feel full!
Great source of Vitamin C and Manganese
Eating foods high in fiber help combat disease!
INGREDIENTS:
Makes 2 servings
2 zucchini, chopped
1/2 cup onion, chopped
2 cups spinach, chopped
1 TBS coconut oil
2 cups low sodium chicken broth (for vegetarian/vegan option use vegetable stock)
1 tsp curry powder
Salt and pepper to taste
*To make a meal, add the following for protein and healthy fat sources: 8oz. diced chicken or 1 cup of cooked lentils or black beans (vegetarian/vegan option). Top with 1/4 sliced avocado, or add 1/2 avocado to the mixture before blending. You can also add slivered almonds or pine nuts to garnish.
DIRECTIONS:
1. Saute the zucchini, onion and spinach with coconut oil for 4-5 minutes.
2. Add chicken broth (or vegetable stock) and curry powder and bring to a boil, then simmer for about 15 minutes or until the veggies are soft.
3. Remove soup and blend in a blender or food processor until desired thickness. *If adding avocado, add the avocado before blending.
4. Add salt and pepper before serving.
5. Enjoy!
