4 INGREDIENT GLUTEN FREE PEANUT BUTTER COOKIES



Hang up your apron because you're not going to need it with these cookies!

All you need are four simple ingredients and about 15 minutes and you'll be in peanut butter heaven! But I must warn you, refrain from having one of these right out of the oven. I know it will be REALLY hard once you smell the aromatic pleasure of peanut butter wafting around your kitchen, but seriously, these babies are HOT HOT HOT once they come out of the oven, so you will need to let them cool!

I have so many clients that have Celiac Disease, are gluten free, or want to eliminate sugar or flours from their diet and I found these to be the perfect cookie for them! Not only are they very low in carbs and calories, but they are loaded with peanut butter amazingness and SO easy to make!

So the next time your sweet tooth strikes, pop some of these bad boys into your oven!

FLOURLESS PEANUT BUTTER COOKIES

Makes 13 cookies. Calories per cookie: 117, Protein: 4.8, Fat: 9.7, Carbs: 5

INGREDIENTS

  • 1 cup of all natural peanut butter (you may use almond butter as well, just do not use a low-fat nut butter)

  • 1 cup of Splenda or Stevia (I've found that Splenda works way better.)

  • 1 large or extra large egg

  • 1 tsp vanilla

DIRECTIONS

  1. Preheat your oven to 350 degrees.

  2. Mix all ingredients together in a medium bowl with a hand mixer.

  3. Spray a cookie sheet with non-stick spray.

  4. Spoon out batter and roll into 1" balls with your hands.

  5. Place dough balls on cookie sheet about 1 - 2" apart.

  6. Bake for 10 - 12 minutes.

  7. Let cool and enjoy!

*If the batter seems too crumbly, add a small amount of water or almond milk to the batter.
