  • ¼ cup sweetener (agave, maple syrup or honey)

Suggested Coatings:

  • Cocoa powder

  • Unsweetened shredded coconut

  • Chili powder

  • Chopped nuts

  • Chia seeds

  • Sea salt

  • Dark chocolate: melt your chocolate in a bain marie (a glass bowl on top of a pot of boiling water) and dip or cover your truffles with the chocolate. Refrigerate for an hour or two.

Preparation:

  1. Prepare small, shallow bowls with your desired coating(s).

  2. Mix the nut butter and sweetener together in a medium bowl until blended.

  3. Add in the protein powder, cocoa powder and almond flour. If the mixture seems too dry, add in some almond milk or water 1 TBS at a time until the mixture comes together as a dough. If the batter is too sticky, slowly add a bit more cocoa powder.

  4. Using a scoop or spoon, scoop the mixture into your hands and shape into 1” balls.

  5. Roll each ball in the coating, gently pressing to adhere.

  6. Place the truffle balls on waxed paper in an airtight container and store in the refrigerator
