For the time that it takes you to get in the car and drive to the nearest fast-food restaurant to pick up a quick (and not so healthy) meal, you can make your own tasty chicken tenders at home! My gluten free chicken tenders are definitely a hit with my clients and their families as well as a staple recipe in my own weekly meal prep!
My favorite way to serve these:
On top of a salad
Tacos - one tender per small corn tortilla, topped with lettuce, onion, cilantro, a slice of avocado and salsa
For a snack - 2 tenders for women; 4 tenders for men (also great for a post-workout snack with quinoa or sweet potato) *for a condiment, serve with mustard
INGREDIENTS:
10 Chicken Strips
1/2 cup, Gluten Free Flour (Bob’s Red Mill is a great one)
1/2 tsp. Paprika
1/4 tsp. Cayenne
1/4 tsp. Sea Salt
1/4 tsp. Black Pepper
1/4 tsp. Garlic Powder
2 Tbsp. Coconut Oil
DIRECTIONS:
Mix dry ingredients in bowl, then coat chicken.
Heat coconut oil in a pan on medium heat. Add a chicken strips and cook for 2 to 3 minutes each side.
Turn the heat up to a higher heat and cook an additional 1 minute each side until golden brown.
Store tenders in an air tight container in the fridge for up to 4 days.
