HUMMINGBIRD PROTEIN MUFFINS

I've never heard of anything "hummingbird" food related and this past week I've seen both a Hummingbird donut and Hummingbird cake! When I found out what they were (banana + pineapple) I was on a mission to come up with some kind of healthy hummingbird concoction, and Bye George, I've done it! Let me introduce you to my Hummingbird Protein Muffins! As you will see in the picture, mine are in the muffin top form which I prefer way over muffins. Not only are they easier to stack and freeze, but you can throw them in the toaster to warm them up! I've seen muffin top pans at Hobby Lobby, Michaels and of course, Amazon.

HUMMINGBIRD PROTEIN MUFFINS

Makes 11 muffins. Per muffin: Calories: 126; Protein 8.5g; Carbs 10.4g; Fat 6.4g

INGREDIENTS

  • 1 cup of Almond Flour

  • 2 Ripened Bananas

  • 1 8oz. Container of Crushed Pineapple

  • 2 Eggs

  • 1/2 TBS Baking Powder

  • 2 Scoops of Vanilla Whey Protein Powder

  • Unsweetened Shredded Coconut

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Whisk eggs in a bowl, then add bananas and mash well.

  3. Add in pineapple.

  4. Add in almond flour, baking powder and protein powder.

  5. Spray muffin pan with non-stick spray. (Since there isn't any oil in these, make sure to spray well.)

  6. Using a 1/4 cup, scoop out batter in to each tin.

  7. Sprinkle tops with unsweetened coconut.

  8. Bake for 12 minutes.

  9. Remove from pan and let cool.

Enjoy by themselves or you can top with a dollop of Greek yogurt or peanut butter.
