Grain Free Banana Muffins

If you've been staring at a couple of over-ripe bananas trying to figure out if you should toss them or turn them into your next culinary creation, I've got a recipe for you!


Bust out your blender because it's time to make some muffins!


GRAIN FREE BANANA MUFFINS

Servings: 12 muffins or 6 muffin tops (these will count as 2 servings)

Calories Per Muffin: 170, Protein: 6g; Net Carbs: 10.5g; Fat: 12g


Ingredients

  • 2 Ripe Bananas

  • 2 Eggs

  • 1 Cup of Nut Butter (to make the recipe Paleo, use almond butter, otherwise peanut butter will work)

  • 2 tsp Vanilla

  • 2 TBS Honey

  • 1/2 tsp Baking Powder

  • Dairy-Free Chocolate Chips

Directions

  1. Preheat oven to 400˚and coat a muffin pan with spray or line a muffin tin with liners.

  2. Place ingredients, minus chocolate chips, into a blender.

  3. Blend until smooth.

  4. Evenly distribute batter into tins.

  5. Top with chocolate chips or any other topping of choice.

  6. Bake 8 to 10 minutes.

  7. Store in the fridge for one week or in the freezer.
