Healthy & Hearty Lasagna Soup!




Welcome to the wonderful world of soup season, where cozy blankets, warm socks, and delicious bowls of soup reign supreme! As you can guess, I've been crafting some new healthy fall/winter recipes for all to enjoy! Today, I have the best new recipe for you - a healthy twist on a classic favorite: Lasagna Soup. This hearty and comforting soup is packed with all the flavors of traditional lasagna but in a nourishing, protein-packed, soul-warming bowl of amazingness! Let's dive into the recipe and get ready to enjoy a bowl of pure comfort!


Before you get started, I highly suggest using crock pot liner bags for this and all recipes, as they make clean-up so much easier! If you haven't purchased them yet, head to the store or order them on Amazon, as you'll need them this winter!


INGREDIENTS:

  • 1lb browned ground turkey or lean grass-fed beef (90 - 93% lean, I prefer a little fat in the meat as it adds great flavor! No need to drain any grease.)

  • One 15oz. Can of Tomato Sauce

  • One 6oz. Can of Tomato Paste

  • One 14.5oz. Can of Diced Tomatoes

  • One 32oz. Box of Chicken Bone Broth (the bone broth adds more protein vs. regular broth)

  • 1 Cup of Cottage Cheese

  • One 16oz. Bag of Shredded Mozzarella Cheese

  • 1 TBS Minced Garlic

  • 2 tsp Oregano and Basil

  • Dash of Sea Salt

  • 8oz. Pasta (I used Jovial Gluten Free Penne Pasta, for even more protein, you can use a protein pasta such as Banza.)


DIRECTIONS:

  1. Brown the ground turkey or grass-fed beef and add to the crockpot (no need to drain the grease, it adds flavor!)

  2. Add in broth, tomatoes, minced garlic and spices.

  3. Cook on low for 6 - 8 hours.

  4. When there's about 15 minutes left, add in the pasta and let cook for 10 minutes.

  5. Add in cottage cheese and mozzarella cheese and mix well.

  6. Let sit and warm for another 10 minutes. The consistency will be a little thicker (this is how I like it!) If you prefer a soupier base, you can add in extra broth.

  7. Serve with some fresh sourdough bread and a side salad! This hearty meal will leave you feeling full for hours!


Servings: 6 (Macros are using 93% grass-fed beef, bone broth, 1% cottage cheese)
